Savoury goodness

Leek, Cauli and bacon soup!!

X3 Leeks- chopped     

x2 celery stalks- chopped

X1 cauli chopped        

x6 squares talleys frozen spinach

X1 onion diced

X5 rashers bacon- chopped with rind removed

1T Turmeric                 

1/2t ground cumin

Salt and pepper

1t chicken stock powder

1Tbutter

Fry leeks, onion, celery and bacon in big pot with butter.
Once softened add water 2-4 cups (depends on how thick you like your soup). Add
chicken stock, spinach, spices and salt and pepper. Bring to the boil then add cauliflower, boil until softened.
Let it cool then blend up with a stick blender. You can add a little grated cheese
to keep you fuller for longer too!!

Roast veg salad

1 broccoli- cut up into florets

¼- ½ cabbage- roast in 1 chunk

1 ½ cup chopped pumpkin

1 red onion sliced

6 Yams- chopped

½ cauli cut florets up into smaller pieces

Roast all of the above with a small amount of olive oil. Once cooked slice cabbage up and red onion into smaller pieces.

Add X2T sunflower seeds, x2T pumpkin seeds, Chop x1 red capsicum.

Dressing- In glass jar add all of the below and shake well

1/4c extra virgin olive oil

¼c Balsamic vinegar

3t Dijon mustard

1t honey

Salt and pepper

1 clove garlic crushed

Easy Easter Eggs

1 soft banana

1/2 cup nut butter

2T melted coconut oil

2T coconut flour

Optional extra x3 dried dates cut into 6 pieces each

Your fav dark chocolate

Mash and mix wet ingredients add coconut flour(if you don’t have any you can whizz up desiccated coconut) Roll into egg shape, (If using dates place a small piece in the middles of egg mix and roll mixture around it) place on baking paper on plate and put in freezer for about 20mins until firmer then coat in ur fav dark choc. Store in fridge for a creamy soft texture or in freezer if you like them firmer.

Gooey choc slice

I usually don’t use this many dates in my recipes but as an alternative to other easter sweet treats this has some good nutrients in it 👍👏😁 It is easy to make and its a win with the boys in the house!!

Base
1c ground almond
2T cocoa powder
2T melted coconut oil
2T warm water

Mix together and press into tin i used silicon loaf tin then put in freezer

Middle
1 cup dried dates soaked in hot water for 10mins then drained
1t vanilla essence
1T coconut oil

Mix well in blender and then spread on top of base. Put back in freezer

Top
2T coconut oil melted
1T cocoa powder
Mix together and drizzle to cover the whole top. Place back in freezer to set.

Remove from freezer and cut into small slices and enjoy!!

Hot cross bun recipe

1 1/2 cups ground almond
8 Tbsp psyllium husk
3 t baking powder
1t salt
120ml olive oil
4 eggs beaten
35ml water
3t cinnamon
1t nutmeg
1t allspice 
1/4-1/2 cup dried fruit of choice
I go with the less amount for the lower carb content but if ur kids like sweeter add more. 

Pre heat oven at 160 degrees
Combine all ingredients in a bowl leave to sit for 10mins which makes the mix less sticky. Then roll into the bun size you would like. I mix a small amount of ground almond with water to make a paste to put a cross on the top. Place on a tray with grease proof paper. Bake in oven for 25mins.
